My Favourite Spread...



Who needs a Thermomix and the $1800 price tag when you have a 'Husband Deluxe'?

Now lemon butter is my favourite spread and I have a lemon tree. So 2009 being a year of trying new things and being frugal at the same time we decided to give making lemon butter a go. Why haven't we done this before?










20 minutes of whisking.




This is amazingly simple to make and the taste.....lush springs to mind. Heaven in a jar.








Made 3 baby jars of lemon butter. Just the right amount as it's preservative free, it won't keep for long. Although it is going to disappear pretty fast, as it's so good.

Lemon Butter

4 eggs
3/4 cup caster sugar
1/2 cup lemon juice
2 teaspoons of lemon rind, finely grated
125g butter, chopped

1. Place eggs and sugar in a double steamer
2. Whisk until the sugar has dissolved
3. Add juice, rind and butter.
4 Whisk for 20 minutes until smooth. Don't boil the mixture.

Dont be surprised if that poor lemon tree dies now the bumper crop might be its last hurrah how it stays alive is beyond me, enjoy your lemon butter

Everyone knows lemon trees survive in all climes through sheer unbudgable sourness. Much like most ex-Politicians. *boom tish*
